Ingredients
  

  • 1 cup fresh flat-leaf parsley finely chopped
  • 2 tablespoons fresh oregano or 2 teaspoons dried oregano
  • 4 garlic cloves minced
  • ½ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon coarse salt
  • ¼ teaspoon cracked black pepper
  • ¼ teaspoon red pepper flakes adjust to taste
  • Juice of ½ lemon optional, for brightness

Method
 

  1. Finely chop the parsley, oregano, and garlic, then add them to a medium mixing bowl.
  2. Pour in the olive oil and red wine vinegar.
  3. Add salt, black pepper, red pepper flakes, and lemon juice if using.
  4. Stir until well combined. Taste and adjust seasoning as desired.
  5. Let the chimichurri rest for at least 5 minutes to allow flavors to develop.
  6. Serve immediately or store in an airtight container in the refrigerator for up to one week.
