Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk or whole milk with 1 tsp vinegar
  • 2 large eggs
  • 1/4 cup unsalted butter melted (plus more for greasing and serving)
  • 2 tablespoons honey optional, for extra sweetness

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 9-inch cast iron skillet or baking dish with butter.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
  5. Spread the batter evenly into the prepared skillet or pan.
  6. Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool for about 10 minutes before slicing. Serve warm with butter and honey.
