Preheat the skillet or griddle over medium-high heat and lightly coat the surface with the vegetable oil.
Place the meat balls on the hot surface and immediately smash them down firmly using a metal spatula until very thin.
Season generously with kosher salt and black pepper.
Cook until the edges are crispy, about 2 minutes, then flip carefully.
Add a slice of American cheese to each patty and cook for another 1–2 minutes until melted.
Toast the buns lightly on the griddle until golden.
Mix the burger sauce by combining mayonnaise, ketchup, mustard, pickle juice, and chopped pickles.
Assemble the burgers: spread sauce on the buns, add patties, and layer your preferred toppings (pickles, onion, lettuce, tomato).
Serve immediately while hot and crispy.
